Food Pairings

Goes with spicy pork pizza, Chèvre cendré (goats cheese rolled in ash), crispy duck leg with plum sauce, drinking and dancing on a warm, endless evening.

The 2022 Gamay Pinot Noir blend was made by combining 55% King Valley Gamay with 45% Yarra Valley Pinot Noir. It underwent a 4-day cold soak followed by 5-7 days on skins, with hand plunging in open top fermenters. The Gamay grapes went through whole berry fermentation, while the Pinot Noir had 10% whole bunch fermentation. The wine was briefly matured to retain its bright, fresh flavours, unfined with minimal filtration.

Growing Conditions

2022 saw high rainfall right up until Feb witch was perfect. Then the rain stopped leading to a moderate harvest period perfect for fresh and full fruit flavour.
